I must confess: I can’t stand turkey. No, really. I don’t want it for any occasion. That does not mean I won’t use ground turkey for a batch of spaghetti. I just don’t want a hole bird hangin around for a week. Ham, on the other hand, is right up my alley! Love it. I put my Christmas ham on my grill for 2 hours yesterday, and then smoked it for 30 minutes. Pardon me while I wipe the slobber off my keyboard……
You can imagine my elation when Off the Grid sent me an email this morning with the following recipe. You read, I have to get to Kroger for a beer and half-and-half.
Ham and Potato Soup
1½ cups bacon, chopped
2 cups milk
2 cups half and half
2 parsley sprigs
½ onion, chopped use 6 to 8 green onions for a milder flavor
3 tablespoons butter or margarine
1 clove garlic, minced
2 stalks celery, ribbed and diced
3 15 oz. cans potatoes or 6 cups of cut, boiled potatoes
3 tablespoons all-purpose flour
Dash of Worcestershire
Pinch of dried thyme
Salt and pepper to taste
Small chunks of ham (amount varies depending on preference)
Grated cheddar cheese (amount varies depending on preference)
Cook bacon until it is just cooked. Discard all but three tablespoons of fat. Add chopped onions, garlic, and celery and cook about 5 to 10 minutes longer or until golden brown. Add potatoes and just enough water to cover. Bring to a boil. In a medium saucepan, scald the milk and half and half. In a small skillet, melt the butter or margarine and whisk in flour until smooth. Add this to the boiling potatoes and cook for two minutes. Add hot milk and cream, Worcestershire, thyme, salt, and pepper. Stir in ham and heat for one minute. You may either add the cheese now, or sprinkle it into each bowl individually.NOTE: If your soup is thinner than you prefer, add a mixture of cold milk and flour to thicken. If it is too thick, add a little milk to thin it out.
Failure is not a disgrace if you have sincerely done your best.
We live in a competitive world that measures success by winners and losers, and insists that every victory creates a loss of equal dimension. If one person wins, it seems logical that someone else must lose. In reality, the only competition that matters is the one in which you compete with yourself. When your standard of performance is based upon being the best you can be — for yourself — you will never lose. You will only improve. Make it a practice to objectively review your performance from time to time. When you fall short, assess the situation and ask yourself: “Is there anything I would or could have done to change the outcome?” If the answer is “no,” if you are satisfied that you’ve done your best, don’t waste time reliving the past. Simply learn what you can from the experience, and then get into action again. If you consistently do your best, your temporary failures will take care of themselves.

There is no such thing as failure, unless it is accepted as such. Every defeat is temporary unless you give up and allow it to become permanent. In fact, temporary defeat often makes us stronger and more capable. Each time we try and fail, we learn something that helps prepare us for eventual success. Only in the classroom is there a single correct answer for every problem. If you try an approach that doesn’t work, try something else. When you view adversity as nothing more than a learning experience, your successes in life will far outnumber your failures.

10. Instead of criticizing others (no matter how much they may deserve it) devote your time to the discovery of traits of your own which should be corrected lest they provide the basis of just criticism against you.
If followed, in a spirit of sincerity, these ten rules will help you to occupy all the space in the world which your talents, education and experience entitle you to enjoy, and they will bring you that sort of peace of mind which surpasseth understanding.
